Quinoa Risotto with Shiitake Mushrooms

To say that I’m a quinoa fan is an understatement. I love Italian food, but at home, I only cook Italian dishes with quinoa flours, grains and gluten-free noodles because they are both delish and nutrish. This is one of the fastest recipes I make at home and my husband LOVES IT. Of course, everything is even faster because he is my sous chef (a true team player, soulmate, and life partner ♥). I came up with this recipe because of my love of quinoa and my husband’s love of risotto.
